Made from premium Pinot Noir grapes grown at Defialy’s Candlebark Hill Vineyard in the Macedon Ranges. Whole bunch pressed, barrel fermented and aged on full lees for 10 months. 11 months in bottle before disgorgment. Zero dosage & zero sulphur. Beautiful balance of crisp acidity and ripe fruit expression.
